Here is how you make Vegetable Breakfast Hash:

Shred the potato into a medium microwavable dish with a lid. Fill dish with cold water and allow to rest for at least ten minutes, or up to an hour. Drain well and squeeze excess water through a sieve. Microwave drained potatoes on high for five minutes. Meanwhile, heat a pan over medium high heat. Once potatoes are done, season them with salt and toss gently with a fork. Add oil spray to the pan and carefully spread the potatoes in an even layer to the hot pan. Cook until golden browned, about five minutes. Spray non-browned side with olive oil spray and flip. push the potatoes to one side of the pan. Add the onions and mushrooms and stir-fry for a couple minutes. Add the remaining vegetables and jalapeno and stir-fry a couple more minutes. Crack the eggs in one at a time and break up the yolk if desired. Cook two more minutes, stirring all of the ingredients together.
