Here is how you make Curtis's Beans:

In a crock pot start your beans cooking on medium. Chop up all the onion, bell pepper, and jalapeno's (take seeds out). In a skillet with butter cook all choped up veggies till limp. Cut up one hole summer sausage and a hole pack of lit'l smokies in to bite size (Lit'l smokes cut into 3's). After veggies are cooked and meat is cut add all items to beans and let them cook on medium all day. Add water to make sauce as thin as you like it. Makes about 10 - 1 cup servings (I like ranch style beans a bit more then Black-eye peas) Takes about 8 hrs to cook if you like your beans soft.Number of Servings: 10Recipe submitted by SparkPeople user CURTIS69.
