Here is how you make homemade refried beans:

before cooking beans, examine sort and rinse well to remove any residual material(rocks) and soak according to package if desired( i dont soak).In a large pot, add beans and 6cups or more of hot water( i add enough water to cover beans +2inches above)chop 3/4 of the onion in big chuncks and crush the 2 cloves of garlic with a knife. Add to the water with a medium bay leaf. ( do not add salt while cooking beans)turn on heat to high until boiling and then reduce to low and let simmer with the lid on for about 1 1/2hour to 2hours. ( to check if beans are cooked try to crush a bean on th side of the pot, it should crush easily)once beans are cooked set the large pot aside and heat up a large skillet with 1/4c of canola oil. Mince the remaining of the onion finely and the chile ancho(make sure to remove seeds). add onion, chile and 2tsp of garlic to the skillet and cook on med heat for about 2mins until soft. with a slotted spoon add the beans from the other pot about 1 cup at a time and mash with a potatoe masher. alternate by adding chicken broth to it and a little bit of the cooking water from the beans to help the consistency. continue mashing making sure not to add too much water, beans should not be too runny. keep the heat on med low while mashing and season with salt and pepper.Serving Size:?13 servings 1/4c dried=3/4 c cooked
