I have sized this recipe down from one I created for a gourmet foods market I used to work in. When I made it for work, I would cook 4 boxes of orzo, so a batch this small, I am honestly not quite sure how many & what size the portions will be. Start cooking the orzo. While waiting for orzo to cook, finely chop bell peppers & cilantro. Finely dice the jalapeno peppers. Drain cooked pasta, rinse thoroughly with cold water. Add oil, lime juice, kosher salt & pepper to taste. MIx in all the vegetables and cilantro.
