juice & zest of 1 lemon
juice & zest of 1 lime
juice & zest of 1 small orange
2 tsp. garlic powder
1 Tbsp olive oil
0.5 C chopped onion
1 small red bell pepper, chopped, seeds & pith removed
1 small yellow bell pepper, chopped, seeds & pith removed
1 small green bell pepper, chopped, seeds & pith removed
1 C chopped mango (may use frozen or fresh)
1 jalapeno pepper, chopped, seeds & pith removed (optional)
1 Tbsp cider or wine vinegar

Here is how you make Citrus Grilled Turkey with Mango Pepper Salsa:

Place turkey breast cutlets into a small pan to marinate. Mix citrus juices, zests, and garlic powder together and pour over turkey. Marinate at least 2 hours or overnight. Heat olive oil in a non-stick skillet. Saute onions until transluscent, add peppers and cook an additional 1 minute (peppers should be crisp tender). Remove from heat and let cool in a bowl. Mix in the mango, jalapeno, and vinegar. Chill at least one hour. Heat grill and remove turkey from marinade. Grill turkey until just done (no pink) DO NOT overcook!
