This is a wonderful American cake recipe, which I've made several times. My first attempt was a bit of a disaster, as I didn't use baking parchment and tried to remove the cake before it was completely cool, so I had to piece the cake back together again once I scraped it off the tin!The next time I lined my cake tin and allowed the cake to cool completely before removing it and it worked perfectly. The cake is wonderfully chocolatey and stays moist for several days.

Preheat Oven to 300?F / 180?C / Gas Mark 3.Put all the dry ingredients in a large bowl.Add the oil, milk and boiling water and mix with an electric mixer until fully incorporated.Add the vanilla extract and the beaten egg, mix again for a minute or so, then pour the mixture into a 9" cake tin, which has been greased and lined with baking parchment (this is important, as the cake will stick to the pan without it).Bake for 1 hour until a knife inserted in the middle comes out clean.Allow the cake to cool completely in the tin.
