1/2 cup cake flour , scooped and leveled, turned into a sifter

4 squares semi-sweet chocolate
3-6 tbsp butter

Here is how you make JC's Chocolate Almond Cake:

Preheat oven to 350 and begin melting chocolate and 2 oz espresso in a double boiler.In the largest bowl cream sugar and butter. In a separate bowl whip egg whites with a pinch of salt until stiff peaks form.Add egg yolks to the sugar-butter mixture, then add the melted chocolate-coffee mixture, and 1/3 of the stiff egg whites with the almond meal. Alternate adding flour and egg whites until fully incorporated into the batter.Pour batter into a greased and floured pan, spread with a spatula so that batter is even and then bake for 25 minutes. The center should still be moist but the 2/3rds around the rim of the cake should yeild a dry toothpick.Let cool 10 minutes before frosting with the Chocolate Butter Icing Prepared as follows:Melt chocolate and espresso in a double boiler, adding butter until a smooth ganache is made. Immediately transfer double boiler to a bowl with ice and water (to stop the heating process) and begin to frost the cake.Frosting the cake involves letting the ganace pour over the sides, so do this on a baking sheet under a cake rack.
