1 cup walnuts or pecans, toasted and chopped (optional)

3/4 cup unsalted butter

1 cup light brown sugar

1 large egg

2 teaspoon pure vanilla extract

3/4 cup all purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

3 cups old-fashioned rolled oats

1 cup dried cranberries, cherries, or raisins or 1 cup white or dark chocolate chips (optional)

Here is how you make Dangerously Delicious Oatmeal Cookies:

Preheat oven to 350. To toast nuts: Line a cookie sheet with foil and spread nuts into a single layer. Place in 350 F oven for 8-10 minutes until golden brown. Chop using a food processor.Meanwhile:Cream butter and sugar by hand or in food processor. Add in egg and vanilla.Mix flour, baking soda, salt, and cinnamon in small bowl.Add to butter mixture and mix well.Remove from food processor and stir in oats and other ingredients (nuts, chocolate chips, and/or dried fruit).Drop ~1 tablespoon of dough per cookie on parchment-paper or foil-lined cookie sheet, spreading cookies about 2 inches apart. Bake at 350 degrees for 15-18 minutes, or until edges are slightly brown. Allow to cool a few minutes before removing from cookie sheet to avoid breaking the cookies.
