This is an OAMC recipe, suitable for freezing. We don't have this often, as it's a bit high in sodium, but for a treat it's a great balance of protein, carb and fat (roughly 15g, 24g, and 8g respectively). I've modified it from a version I found online to reduce the fat and add whole grains and more fiber. If you have access to low fat cheese you could lower the fat even more.

2TB vegetable oil
2 packages Yves Mexican or approx 3 cups other TVP
2 cans black beans
1/2 cup Fat free Italian Dressing
4 cups salsa
2 cups sour cream
3 cups cheddar cheese
8 whole grain tortillas

This recipe also calls for 4TB of taco seasoning, which is not included in the nutritional information. I make my own to lower sodium, which is as follows:

4TB chili powder
1 tsp garlic powder
1 tsp onion powder
1 tsp red pepper flakes
2TB cayenne pepper
2TB cumin
2 tsp salt

Mix and store in sealed container.


How Do I Make OAMC Spicy Enchilada Bake?

Here is how you make OAMC Spicy Enchilada Bake:

Heat 2TB vegetable oil in a LARGE skillet over medium heat. Brown 2 diced onions and 2 packages Yves Mexican (or roughly 3 cups of any other TVP). When onions are soft, add 2 cans of black beans (540mls each), 1/2 cup fat free Italian dressing, 4 cups of salsa and 4TB of taco seasoning mixture. Stir well to combine seasoning throughout. Lign up 4 9" pie plates. Cut the tortillas into quarters and arrange 4 quarters (one whole tortilla) in the bottom of each pie plate. Next, layer 2 ladlefulls (about 1.5 cups?) over each tortilla, followed by 1/4 cup of sour cream and roughly 1/3 cup of cheese. Repeat layers for each pie plate. To bake now: 400 degrees for about 45 minutes (til cheese is bubbly). To freeze: 1) Assemble casseroles, cover with foil, then cling wrap or place in a ziploc bag. Cook from frozen at 400 for about 1 hour. or 2) Cook as per above, cut into servings and freeze in freezer-safe individual portions (my preference). Serve with Mexican rice! Serving Size:?Makes 4 - 9" pies (6 servings each)
