1 can black beans, rinsed and drained
1 egg (or egg replacement equivalent, for vegans)
1/2 cup bread crumbs (more or less for consistency)
2 cloves garlic, minced
1 cup onion, diced
2 tbsp. olive oil, separated
1/2 tsp. red pepper flakes (more or less depending on how spicy you like it)
1/2 tbsp. cumin
1 tbsp. dried basil
salt and pepper to taste

Here is how you make Black Bean Medallions:

In a medium pot, saute onions and garlic over medium heat in olive oil until soft. Meanwhile, rinse and drain black beans, and put them in a large mixing bowl.Mash black beans with fork or potato masher until at somewhat pasty consistency, but still with some whole beans. Add sauteed garlic and onion, and the remaining ingredients (except olive oil). Mix well. You can vary the amount of breadcrumbs used depending on the consistency of the mixture. You don't want it to be too dry, but it also needs to stay together in the skillet. Shape black bean mixture into medallions, about the length of a tennis ball and 1 inch width. Heat olive oil in large skillet, and fry medallions until thoroughly heated through, and flip to get crispy on both sides. Enjoy!Note: you can use different spices depending on what you have at home.
