Here is how you make Sausage and White Bean Ratatouille:

Slice sausage and add to large saucepan with olive oil and sauté until golden on both sides. Remove and blot with paper towel. Add garlic, peppers, eggplant and onions to pan and cook until softened. Return sausage to pan and add zucchini, tomatoes, salt and spices and heat to boiling. Reduce heat and simmer for 30 min. stirring occasionally.
