I love beans! When I worked at a health food store years ago I became friends with lots of "hippies" who ate beans and rice all the time. I started these beans off as cuban beans, but one night I didn't have salt so I used my braggs liquid amino's. It went from tasting very cuban to cute health food store like!

* Mixed Vegetables, frozen, .5 package (10 oz)
* Sweet potato, 1 sweet potato, 5" long
* Water, tap, 2 cup (8 fl oz)
* Sofrito Sauce, 2 tbsp
* *Braggs Liquid Aminos, 1 tsp
* *Canola Oil, 1 1tsp


How Do I Make Hippie Black Beans!?

Here is how you make Hippie Black Beans!:

Heat the oil in a large cooking pot. Preferably a soup pot. saute the peeled and cubed sweet potato until nice and golden. Then add the sofrito and rinsed black beans (normally I use soaked beans because they taste better, but this is a quick dinner) and the frozen mixed veg. I use the carrot, corn, green bean, and lima bean mixed vegetable. Saute for about 5 minutes, stirring frequently. Add the bullion cube and water. Turn down to a simmer and add the braggs or salt to taste. Simmer until the sweet potato is cooked and then serve.I normally serve this with quinoa. If you want more of a cuban style beans, out salt instead of brags and don't add the mixed veg. For some reason the braggs makes it taste more hippie/health food store like.
