Here is how you make Carrot Kugel:

Peel, cook and mash carrots. Beat oil and brown sugar together until smooth. Beat in eggs, lemon juice and vanilla extract. In a separate bowl, mix together flour, salt and baking powder. Add to egg mixture and then add mashed carrot. Blend well. Pour into an ungreased 9 x 9 inch pan and bake at 350 F. for 40-45 min.
