Add curry powder and garlic and cook for 1 minute. Over heat stir in ginger, cumin, coriander and cardamom. Add tomatoes and stir through. Then add half can of coconut milk and cinnamon stick and turmeric. Meanwhile, place cashews in blender and blend until almost a paste. Add the second half can of coconut milk together with the cashew paste and combine well. Add all the prepared vegetables and the second can od coconut milk. Stir and bring to the boil. Cover and simmer for 25 minutes. Uncover and simmer for another 10 minutes. Lastly, add the yoghurt and garam masala.
