Here is how you make Quinoia Casserole:

cook quinoia per instructions with coconut oil. In large bowl mix remaing ingreadients except spinach & chedder cheese. Pour into a sprayed 8"x8" baking dish. Top with layer of spinach and chedder cheese. Bake covered at 400 degrees for 40 min.
