Here is how you make My Easy Enchilada Casserole:

Brown ground turkey, set aside. Pour a thin layer of enchilada sauce in bottom of a 11x13 baking dish. Pour some enchilada sauce into a shallow bowl. Take 6 tortillas and drop each side into bowl to coat. Lay them in the bottom of pan. Add a layer of ground turkey. Add some Mexican cheese. Pour some enchilada sauce. Repeat these layers again until the top is just the remaining 6 tortillas. Pour remainder of enchilada sauce over the top and top with the mozzarella cheese.
