I literally made this up today and it was soo delicious i had to post it!! This recipe is extremely low-fat and has a good amount of fiber! I did not measure the spices part, I sprinkled here in there so if you want to put more than what I put in the Ingredient list, have at it!! there no calories in the spices ;)

2 chipotle peppers, minced (out of a can of Embasa Chipotle Peppers in adobo )
1 roasted red pepper chopped (trader joe's has them in a can)
1 lemon
6 cloves of garlic minced
2 tsp of all spice (can get at a mediterranean store or other ethinic store)
2 tsp of salt
2 tsp of pepper
2 tsp of ground cumin
1 cube of chicken boullion

1. add first the chicken, sprinkle HALF of each: all spice, salt, pepper, minced garlic2. add the potatoes, the rest of the all spice, salt, pepper, minced garlic, and cumin. add the chipotle peppers, the roasted red pepper.3. add the cube of chicken boullion, seperating it as you add to the mixture. squeeze the lemon on top at the entire mixture. set the crock pot to low for 6 hours. 4.
