18 oz. Chicken Breast
5 oz (1/2 package) Spinach
1.5 Tbls Olive oil

Here is how you make Easy Chicken, Tomato, Bean, Spinach One-Pot Meal:

Makes about 8 1-cup servings.Prep:Open cans.Rinse beans thoroughly.Cut chicken into 1" cubes.Cook:Saute chicken in olive oil on Medium High heat until almost or fully cooked. (Letting it brown a little will add flavor.) Add tomatoes (undrained). Stir occasionally, let the tomatoes warm up. Add beans. Change temperature to Medium.Stir occasionally, let the beans warm up.Reduce temperature to Low.Add spinach, mix, cover and let simmer until desired thickness. Season to taste though I find the canned beans usually have enough salt to not add any extra to the dish. ***Goes well served over whole wheat pasta.
