This dish was one of my wife's favorites to make. It is easy and taste great. It has a large amount of prep time but is well worth it. The recipe is easy to increase if you wish to make a larger dish.

The ingredients for Cindy's Chicken Casserole are:

2 Boneless, Skinless Chicken Breasts
2 Cans of Cream of Mushroom
2 Cans of Cream of Chicken
2 Cans of Chicken Broth
1 bag of Shredded Cheese
1 bag of Tortilla Chips
1 medium onion
1 green bell pepper
1 yellow bell pepper
2 cloves of garlic


How Do I Make Cindy's Chicken Casserole?

Here is how you make Cindy's Chicken Casserole:

Dice the onion, bell peppers and garlic and saute until tender. Boil the chicken until done. Add the cream of mushroom, cream of chicken and take one of the cans and use 2 cans of the broth from the chicken. Heat until starting to boil. Now either grease a 9 x 13 dish or for an easier cleanup afterwards, use aluminum foil to cover the inside of the dish. Crush up the tortilla chips to medium fine. Spread a layer of chips so you have a good bed of chips to start with. Next, spread out a moderate amount of the onions & peppers across the chips. Take the chicken and shred it up across the top of the dish. Now spoon out a thin layer of the broth mixture across the top until completely covered. Sprinkle a layer of cheese across this next. Now repeat with the chips for a 2nd layer. Repeat with the onions & peppers next. Repeat with the chicken, then the broth and cheese. Repeat all for the 3rd layer. For the last layer of cheese, make sure it is good and thickly covered. Now, place in the oven at 350 for 30 minutes or until the cheese on top melts. Should make about 8 servings..
