24 corn tortillas
2 cans Old ElPaso mild red enchilada sauce
1 cup crumbled Feta cheese
1 cup crumbled goat cheese
1-2 chicken breast, cooked and diced
1-2 Tbsp cilantro
2 cloves garlic, minced
1 small onion, minced
2 tbsp lime juice
salt and pepper to taste


How Do I Make Goat Cheese and Chicken Enchiladas?

Here is how you make Goat Cheese and Chicken Enchiladas:

Preheat oven to 375. In food processor, combine goat cheese, feta, cilantro, garlic, lime juice, salt and pepper. Pour into large bowl and mix in diced chicken. In groups of 5 or 6, wrap corn tortillas in damp paper towels and microwave for 1 minute. They will be HOT! One by one, fill with 2 tbsp of chicken/cheese mix and roll. Set onto bar pan side by side, should make 2 rows. After all the tortillas are rolled and onto bar pan, carefully pour enchilada sauce over top and sprinkle w/ monterey jack cheese.
