1 14.5 oz. can tomatoes, cut up
1 C chicken broth
1 medium sweet red pepper - chopped
1 bay leaf
2 TBS chili powder
1 TBS sugar
1 tsp dried oregano - crushed
1/2 tsp. ground cumin
8 oz. dried mushrooms (optional)

Here is how you make Chicken Chili (tomato-based):

Cook half the chicken, celery, onions and all of the garlic in hot oil in a dutch oven until chicken is brown and vegetables are tender. Remove from dutch oven. Repeat with remainder of chicken, celery & onions. Return all to pot. Stir in tomato sauce, tomatoes & broth. Bring to boil; reduce heat. Simmer covered for 15 min. add rest of ingredients.
