Sprinkle salt, pepper, and curry powder (not too much) on chicken. In skillet over med-high heat, add 1T. olive oil. Add chicken and cook until browned, stirring often. Remove from pan.Saute onion and mushrooms in 1T olive oil. Add evaporated milk and corn starch. Cook over low heat until thickened; add snap peas (or broccoli).
