Spray baking dish with cooking spray.Spray pan with cooking spray. Cook chicken according to package. Add red peppers and green onions for about 3-5 minutes based on your preference (I like it 3 minutes - still crispy). Add Beans and 2/3 of the can of Enchilada sauce. Cook until warm throughout. Turn off heat and add cheese. Divide mixture b/t 8 tortillas. Place seam side down in baking dish. Cover with remaining enchilada sauce. Bake 20-30 minutes. This recipe is really easy to adjust to your personal taste - I often add cumin and chili powder. Tip: You can prepare this a day ahead by not putting in the oven, but putting in the fridge, and just finish baking when it's dinner time. (I often start this Sunday afternoon and have for Monday night dinner).
