- 2 onions, sliced
- 4 cloves of garlic, minced
- 2T tomato paste
- 1t salt
- 1t cracked black peppercorns
- 1t dried oregano
- 1/4t ground cinnamon
-1 c coarsely chopped cilantro, stems and leaves
- 1T lemon zest
- 2T lemon juice
- 1/2c chicken broth
- 1lbs. skinless bone-in chicken thighs (about 12 thighs)
- 1 or 2 jalapeno peppers, chopped
- Finely chopped cilantro and green onion for garnish
- Grated lemon zest for garnish

1. Toast pumpkin and cumin seeds over medium-high heat, stirring constantly, until pumpkin seeds are popping and cumin is fragrant. Set aside.2. Heat oil over medium-high heat. Add onion and cook until softened. Add garlic, tomato paste, peppercorns, oregano and cinnamon and stir for one minute.3. Transfer contents to food processor. Add cilantro, lemon zest and juice, broth and reserved pumpkin and cumin seeds and process until smooth.4. Arrange chicken on bottom of slowcooker and cover with vegetable mixture.
