3lbs chicken breast, diced to 1 inch pieces
1 onion diced
1 packet of taco seasoning
1 can of black beans drained and rinsed
2 cups Monterey Jack cheese shredded
2 tbsp of Extra virgin olive oil

In Dutch oven, add 1 tbsp of olive oil, then add chicken and cook on all sides 6 to 10 minutes or until browned on outside and cooked through. Transfer to plate.Add remaining tablespoon of oil to same Dutch oven. Add onion, cook 4 to 5 minutes or until onion softens. Stir in seasoning mix and chilis; cook 1 minute longer. Open tomatoes, and add with liquid. Heat to simmering.Add chicken and beans. Return to simmering, and cook 5 minutes to allow flavors to combine. Remove from heat and stir in cheese.
