Here is how you make Spanish Chicken and Vegetables:

Brown chicken thighs, garlic, and diced onions in olive oil. Blenderize tomatoes and green pepper until pureed. Once chicken is browned, add green pepper/tomato mix. Cover and simmer for 10 to 15 minutes, until somewhat reduced. Add wine, cumin, salt, and pepper. Cover and simmer approximately 45 minutes (until chicken leaves the bone easily). Add cabbage and cook 5 additional minutes. Serve over rice or whole wheat noodles.
