Thaw shrimp and peel. Rinse and pat dry, salt and pepper to taste. Cook red onion in coconut oil on medium heat until caramelized. Remove red onion from pan and add shrimp. Cook on medium heat 2-3 minutes, turn and cook an additional 3-4 minutes. Stir in white wine to pan and simmer until reduced. In a bowl, mix sour cream, caramelized red onions, and salt. Cook grits as directed on package. When done, stir in parmesan cheese until melted.
