Cook fresh corn, slice and chop2, chop 1 large onion3. chop peppers4. slice tomatoes, making the slice thick about 1/4"5. chop 2 cloves of garlicPlace corn in a bowl, place peppers and onions in bowl, place sliced tomatoes on plate for latter use.Heat large skillet with olive oil, brown ground beef for about 5-8 mins on high heat, then add onion/pepers/garliccook for about another 5-10 min till onions are soft and pepers are tender, stir. scramble the 2 eggs, once onions and pepers are tender added egg stir around and cook for another 2-3 mins till done. Take off heat. Pre-heat oven to 350 degrees, get 2 qt round cassrole disk.Please 1/2 half of ground beef mixture in bottom, then place 1/2 of the corn, then layer top with 1/2 of tomatoes, top with 1/2 of the bread crumbs dot with 1 tbsp of butter, repeat layers.Bake for 30 to 45 mins in 350 degree oven till golden brown on top.
