4 small Aubergines or 2 large ones
3 tbsps olive oil
1 yellow onion, chopped
1 green bell pepper, chopped
2 garlic cloves, chopped
1 can diced tomatos, drained
1/4 cup raisins
1 tsp tomato paste
1/2 tsp ground allspice
1/2 tsp salt
1/4 tsp cayenne
2 tbsps sliced almonds
2tbsps minced fresh parsley


How Do I Make Turkish Eggplant?

Here is how you make Turkish Eggplant:

1. Preheat oven to 375F2. Cut the eggplants lengthwise into 1/2 inch slices (if using larger eggplants, quarter them first) and arrange on lightly oiled baking sheet2. Bake for 10 minutes and set aside to cool. Do not turn of the oven.3. Heat 2 tbsps of the oil in a frying pan over a medium heat. Add the onion, bell pepper and garlic and cook until softened.4. Add half of the tomatos, the currents and tomato paste, allspice, salt and cayenne. Cook for 5 minutes.5. Arrange half of the eggplant slices in a single layer in a baking dish.6. Spread the mixture on top.7. Arrange the rest of the aubergine slices on top. Sprinkle the eggplant with the remaining tomatoes and almonds.8. Drizzle with remaining oil.9.
