Here is how you make Flounder Florentine:

Cook frozen spinach as directed; drain off water. Mix together ricotta, mozzarella, and Parmesan cheeses. Add cooked spinach to cheese mixture and mix well. Place a scoop of cheese/spinach mixture(~2 Tbs, depending on fillet size) in the middle of each fillet, and fold ends over to form a roll. Place rolls in a baking dish, and cover with foil.Bake at 350F for 20 minutes.
