Mix the flour and cornmeal together with the salt, pepper, and lemon peel. Pour peanut oil onto baking sheet (with an edge so the oil doesn't run off) and make sure the whole sheet is covered. Rinse the orange roughy filets, dredge in the flour mixture and put onto the oiled baking sheet. Place baking sheet on the grill (I like to close the lid but not required) and let cook about 6 minutes or so. Then flip the filets and let cook another 6 minutes.
