Mexican Cheese (Queso Fresca) How Do I Make Barbecued Pollo Asada Super Fries?Here is how you make Barbecued Pollo Asada Super Fries: Slice potatoes into 1/2" thick fries and place in a large bowl. Fill with water, cover and set aside. For the Salsa Fresca, mix all ingredients. Cover and refrigerate.Mix all marinade ingredients in a large bowl.Butterfly chicken breasts and slice lengthwise into 3/4" thick strips lengthwise. Add to the bowl of marinade. Cover and refrigerate for half an hour, or up to an hour. Heat barbecue to a medium-high heat on one side and an indirect heat on the other side.Heat oven to 400 degrees. Drain potatoes and pat dry with a towel. Place potatoes on a cookie sheet and add olive oil and garlic powder and salt. Toss to coat. Arrange fries in a single layer on a cookie sheet. Bake at 400 degrees for twenty minutes, turn fries and cook an additional ten to twenty minutes or until somewhat crisp and cooked through. Remove chicken breast strips from the marinade and allow to drain well. You can blot it with a paper towel to remove excess moisture.Barbecue for a minute or two on each side and move to a cooler side of the barbecue and continue to slowly cook for another few minutes or until tender but not dry. Baste with the marinade to keep the meat from drying out as needed. Remove and tent with aluminum foil.
