This is a cajun seafood dish with my own little twist. I used a recipe from the Food Netwrok and tweeked it a little to give it a little spice.

What Are The Ingredients For Olinenut's Jambalaya Recipe?

The ingredients for Olinenut's Jambalaya are:

1 pound lite smoked sausage, sliced in 1/4 inch thick and halfed
6 or 7 scallions, trimmed
1 Large Green Bell Pepper, chopped
2 Large Celery stalks, chopped
3 cups Fat Free Chicken Broth
1 1/2 cups Long Grain Wild Rice
1/2 teaspoon Dried Thyme
1 pound raw Shrimp, peeled
2 cans Rotel Tomatoes with Green Chilies
Black Pepper (to taste)


How Do I Make Olinenut's Jambalaya?

Here is how you make Olinenut's Jambalaya:

Brown Sausage in sausepan and then set sausage aside onto plate.Chop scallions. Add white and pale green parts to saucepan. Reserve dark green parts fro garnish. Add the green pepper, celery, and garlic into saucepan and saute over medium heat for about 5 minutes. Add Broth, Rice, Thyme, Rotel and Smoked Sausage. Bring to a Boil. Reduce the heat to simmer and cook jambalaya, covered for 10 minutes. Stir in Shrimp and Black Pepper to taste. Cook for 10 to 15 minutes, covered until shrimp are done and rice is tender. Serve Jambalaya sprinkled with the dark scallions.Substitutions: I like mine spicier so when making for myself I use "Extra Hot Rotel" instead of "Original". If recipe is too spicy you can substitute diced tomatoes instead of Rotel. I have also added Cayenne Pepper before. You could also substitute Diced Chicken for Sausage or Shrimp.Number of Servings: 4Recipe submitted by SparkPeople user OLINENUT.
