Here is how you make Low Carb Beefed-Up Meatloaf:

Preheat oven to 350 degrees F.In a small bowl, mix together the tomato topping ingredients. Set aside.In a large bowl, mix together meatloaf ingredients.Working on waxed paper, form meatloaf into a 10"x8" flat rectangle. Place layer of prosciutto slices on top. Top prosciutto with a layer of provolone slices. Roll up the rectangle (like you would a jelly roll or burrito) and seal ends by pinching meat (to keep cheese from oozing out during baking).Place the roll, seam side down, into a 5"x9" loaf pan. Spread the tomato topping over entire loaf.Place pan in oven and cook for 1 hour and 25 minutes or until meat temperature is 165 degrees F.
