Wash and slice the tomatoes. Lay on a baking sheet sprayed with nonstick spray or lined with foil. Brush with olive oil. Bake at 400 degrees for 1 hour, or until brown around the edges.When tomatoes are finished, prepare pasta. Pulse avocados, garlic, lemon juice and salt in a food processor until creamy.
