Here is how you make Tagliatelle Pasta:

With a standing mixer using the dough hook: add flour and salt then add eggs 1 at a time. Mix until all of the flour is incorporated. You may need to scrap the sides down.Without a mixer: On a clean counter, put the flour in a pile and make an indentation/well in the center. Add eggs to the center. Using a circular pattern with a fork, break eggs and begin slowly incorporating more flour in an outward spiral until all flour is incorporated then knead until smooth.On a floured surface, roll the dough to desired thickness. Move the dough to a clothed surface (I used a towel on the counter) and let it rest 10-30 minutes depending on heat and humidity. Touching the dough should not reveal any tackiness. Flour the dough and gently fold it over on itself for easier cutting. Cut into strips of desired width.Boil in salted water for 3-5minutes until al dente. Pasta will not become translucent but will look doughy. You can also freeze unused, unboiled pasta. It keeps well.
