Here is how you make Southern Style Low-Carb Pork Chops:

Trim all fat from boneless center-cut pork chops, about 3/4 inches thick. Combine flours in small bowl. Sprinkle chops with spices. Heat oil in black cast-iron skillet until smoking. Place chops in skillet and cook, turning once, until golden brown. Remove to platter. Sprinkle flour into hot oil to make roux and cook, stirring with fork, until light brown. Add water to roux and stir until thickened and then place chops back in skillet. Turn to coat and turn heat down to med. low. Cover and cook chops until tender.
