1/2 C chopped celery
1/2 C chopped onion
1C fresh chopped mushrooms
1/4 C golden raisins, chopped
1/2 C chicken broth
1t Italian seasoning (herbs)
2t whole wheat flour
1/2t black pepper

Here is how you make Raisin and Mushroom Stuffed Pork Chops:

In skillet or pot heat 1T olive oil to medium. Add celery, onion and mushrooms, cook until tender. Add raisins and spices, stir for less than a minute and remove from heat.Cut pocket into pork chops, stuff with vegetable/raisin mixture and close with tooth picks. Add second tablespoon of olive oil to skillet or pot and heat to low-medium. Add pork chops and cook for 8-9 minutes per side, or until no longer pink. Remove chops, add chicken broth to skillet/pot and heat to medium-high, whisk in flour to make a gravy and spoon over the chops.
