6 slices bacon (chopped into pieces)
2 cups sliced mushrooms
1 medium onion, chopped
2-3 cloved chopped garlic
2 cups milk (use more or less depending on desired thickness)
2 cups chicken broth (use more or less depending on desired thickness)
Salt (to taste)
Pepper (to taste)
Oregano (to taste)

Here is how you make Potato Corn Chowder:

Makes 8 2-cup servings* Boil potatoes and cabbage in salted water until very tender, drain and set aside* In the same pot cook the bacon pieces until crisp. Remove with a slotted spoon, leaving the grease in the pan, and drain on a paper towel* Add onions, garlic and mushrooms to the bacon grease and cook until tender* Mix the cooked veggies in with the potatoes and cabbage and set aside* Using a blender or food processor blend about 2 cups of the potato mixture at a time with about 1/2 cup of milk and 1/2 cup of chicken broth until the desired texture. * Pour the soup back into the pot as each batch is blended, stir well and keep warm* Once all the soup is blended and back together in the pot, stir in 1 bag of frozen corn, the cooked bacon pieces and season with salt, pepper and oregano to taste* Serve with crusty bread and a big salad for a hearty winter meal!Number of Servings: 8Recipe submitted by SparkPeople user KIRANERYS.
