250 g red-skinned potatoes, diced
2 cups of onion, diced
2 cups of red pepper, diced

Here is how you make Chorizo, Potato and Red Pepper Frittata (Bill Granger):

Heat 1 t of oil in a 20cm frying pan over medium heat and cook the chorizo, stirring occasionally, for 5 to 6 min or until crisp. Drain on kitchen paper. Turn the heat to medium, add the remaining oil, the potatoes and onion to the pan and cook, sitting occasionally, for 5 minor until the onions are soft. Add the pepper and cook for 5 min before returning the chorizo to the pan. Preheat your oven grill. Whisk the eggs and pour into the pan. Reduce the heat to low, cover the pan and cook until the eggs have almost set. Sprinkle with parsley and parmesan and then put it under the grill 3-4 min until the frittata is golden and puffed.
