1 lb firm or extra-firm tofu, cut into 1/2 inch cubes
1 onion, diced
2 cloves garlic, minced
2 carrots, sliced/diced
1 parsnip, sliced/diced
1 bell pepper, diced (any colour)
1 lg can crushed tomatoes
1 can coconut milk
3 tsp curry paste OR 3 tsp curry powder
1 Tbsp Bragg's or soy sauce
1 cup frozen corn
1 cup frozen edamame or green peas
2 cups baby spinach

Here is how you make Sweet potato tofu curry:

Heat a large pan over med-high heat. Add the onion and garlic and cook until beginning to brown. Add the peppers, then deglaze the pan with a little water (about 1/2 cup) before adding the curry paste or curry powder. Cook this for a minute or two, then add the soy sauce or Bragg's, coconut milk and tomato and bring back up to a simmer over high. Add the sweet potato, carrot, parsnip and any other hard/root vegetables that need to cook for a bit. Bring back up to a simmer, stirring. Once you see bubbles, reduce heat to low, cover and let it cook for about 20 - 25 minutes. Now add the tofu, edamame, corn and spinach, this would be the time to add any other more delicate veggies like zucchini or broccoli. Increase heat to high again to return to a simmer and then back to low for 10 or 15 minutes. Serve over rice with Sriracha. Mmmmm!Serving Size:?8
