Oregano, ground, 1 tsp
Mustard seed, yellow, .ground, .25 tsp
Broccoli, fresh, 2.5 cup, chopped
Mushrooms, fresh, 2.5 cup, pieces or slices
Garlic, 2 clove
Soy sauce (tamari), 2 tbsp (I use Bragg's)
Soy Milk Plain Light, 1 cup
Cider Vinegar, 1 tbsp
Nutmeg, ground, .25 tsp
Bread crumbs, dry, grated, plain, .25 cup (I used Panko)
Walnuts, 1 cup, chopped


How Do I Make Broccoli Mushroom Walnut Pasta Sauce?

Here is how you make Broccoli Mushroom Walnut Pasta Sauce:

Toast the walnuts. In a skillet over medium heat cook the onions, salt, pepper, oregano, and mustard, stirring occassionally, for 4-5 minutes. Use oil or water as needed to prevent sticking. Add broccoli, mushrooms, garlic, and tamari and cook another 5 minutes until broccoli is just tender and bright green. Remove from heat. In a food processor, combine the sautes veggies, milk, vinegar, nutmeg, and breadcrumbs and pulse until all is mixed but still chunky. Add the nuts and pulse until mixed in. You want to keep some texture. Serve with pasta. Thin the sauce with 1/4 cup of pasta cooking water if you want a thinner sauce. You can add 1/4-1/2 cup parmesan cheese to the puree if desired. You can also drizzle some olive oil over the dish and/or squeeze some lemon juice over top. I burnt my first batch of walnuts and ended up using half walnuts and half hazelnuts and that was quite tasty, so feel free to mix up the nuts to meet your tastes.Serving Size: 4 1-cup servingsNumber of Servings: 4Recipe submitted by SparkPeople user CONNECTED1.
