1/2 red bell pepper, finely chopped
1 medium zucchini, diced
1 slice vegan bacon, diced
1 clove garlic, minced
1/2 a large red tomato, cubed
1 cup tap water
2 tsp. Garlic Powder
Salt to taste
2 tbs. olive oil
1 cup napa cabbage, chopped
1/4 cup water
4 cups fresh spinach
1 lime, for juicing
1/2 medium eggplant, sliced into rounds
1 tsp. olive oil
6 oz dry pasta, cooked according to package instructions

Here is how you make Pasta with Vegan Red Sauce, Eggplant and Greens:

1. Place onions, celery, carrots, and olive oil in a skillet. Cook on high heat until browned and soft, stirring every three minutes or so. The onions will be translucent when cooked.2. Add zucchini, vegan bacon, garlic, and red peppers. Cook until zucchini is soft.3. Add tomato cubes and all juices from tomato, water, garlic powder, and a dash of salt. Cook until soupy in consistency. Remove from heat, cool, and blend in blender until smooth. 4. Put cabbage and water in skillet on high heat. Cook covered, until cabbage is translucent.5. Add spinach, cook covered until completely wilted. Add lime juice for flavor. 7. Cook eggplant rounds on skillet,brushing both sides with olive oil. Cook until browned and tender. Cut into cubes6.
