1 pkg (20 oz) of 93% lean ground turkey (lean ground pork can also be used)
3 garlic cloves (crushed)
1 tbsp fennel seed
1/4 tsp black pepper (or to taste)
1 cup chopped onion
1 cup diced celery
1 can diced tomatoes
1 bay leaf
1 cup (or half a 16 oz bag) dried lentils
4 cups fat free chicken broth
1 cup dried plain bread crumbs
1/2 cup grated parmesan cheese



How Do I Make Sausage and Lentil Cassarole?

Here is how you make Sausage and Lentil Cassarole:

Over medium heat, in a large pot, add ground turkey (or pork), crushed garlic, fennel seed, and black pepper. Cook until meat is cooked through but not dry. Add chopped onion and celery and cook until almost translucent. Add the tomatoes, bay leaf, lentils, and 3 cups of chicken broth. Before adding the chicken broth, check the cooking directions on the package of lentils for exact amount of liquid needed. Partially cover with the lid and reduce the heat to medium low. Stir occasionally. Add in remaining cup of broth as needed until lentils reach desired softness and mixture is desired thickness.Put into a baking or cassarole dish, top with breadcrumbs and bake for about 1/2 hour or until topping is crispy (about 350 degrees). The edges of the filling should be bubbly.Serve with grated parmesam cheese. Note: This dish stores very well and is even better the next day making it perfect for planning meals in advance.
