Here is how you make Spicy Mango Quinoa:

Sautee chopped up shallot and garlic in the bottom of the pan that will be used for the quinoa. Once browned on the edges, add quinoa to toast for about 5 minutes while stirring. Once the quinoa begins to crackle, add two cups of water and slices of the two jalapenos. Bring to a boil. Turn down to low. Cook and cover for 20 minutes. Once done, press lightly into a casserole or pyrex pan, or spread on a platter. Place slices of fresh mango on top in whatever size pieces you prefer. Sprinkle with cayenne.
