5 cloves of fresh garlic (diced fine)
1 cup Parmesan Cheese
1 box Manicotti (10 count)
1 tbsp Olive Oil

Here is how you make Spinach Stuffed Manicotti:

Put 1 tbsp of olive oil in a frying pan and warm (but do not brown) garlic and onions. Steam spinach for about 5 minutes to soften the leaves, then chop up fine. Add spinach to frying pan and warm through, stirring frequently.Cook manicotti noodles until al dente then drain.Prepare a large cassarole dish by pouring 1/2 of one can of spaghetti sauce in the bottom and spreading evenly.Mix spinach/onion/garlic mixture in a bowl with the ricotta and parmesan cheeses.
