1 large Onion, diced
3-4 cloves Garlic, chopped
2 tsp. Cinnamon, ground
1 tsp Cayenne Pepper
2-14.5 oz/406g Tomatoes, diced, canned
1 Fresh Tomato, halved & sliced
3-15oz/840g Chickpeas
1-14.5 oz/406g Kidney Beans, canned & rinsed
2 large Potatoes, diced
1 c. diced fresh carrots
1 tsp. Black Pepper, ground
0.5gal/8 cups water


How Do I Make Moroccan Stew - Vegan Version?

Here is how you make Moroccan Stew - Vegan Version:

Heat olive oil in a large, deep, heavy pot over med/high heat. Add the diced onions and saute until onions are translucent. Add garlic, cinnamon, cumin, cayenne, and paprika (I sometimes add a little more olive oil if it looks too dry). Saute for 1 min (Smells good, right?). Add tomatoes, chickpeas, and water (if you like a thinner soup, add 2 additional cups of H2O). Bring to a boil for about 5 minutes, stirring frequently. After you have brought to a boil, add the potatoes and carrots, cook uncovered for 5 minutes.
