How Do I Make Don's rolled stuffed cabbage?

Here is how you make Don's rolled stuffed cabbage:

This can be tricky but it's simple once you get the hanng of it. 1. Put a large pan of water on to boil, enough to completely cover your head of cabbage when submerged.2. While water is heating trim up the cabbage getting rid of tough outer leaves make sure you can get to vein which holds leaf onto core easily. Next get one or two meat forks and jab both of them into the core at a slight angle to lift, submerge, and handle cabbage.3. When water is boiling submerge cabbage into pot and hold under boiling water for a couple minutes until leaves soften enough to peel.MAKE SURE you have a big bowl to put the cabbage head into when you lift it from the hot water as it will drain and is hot.4. Cut the vein which holds the leaf onto the core and remove the leaf. Continue this process until you have enough leaves or they get to small to use. (dipping holding and cutting and peeling) Then Cut the thick vein out of each leaf and set aside.5. I cut the core out and grind it up with the tough outer leaves, the veins and use them in the filling using a meat grinder.Note: you can use chopped green peppers, mushrooms or about any other fillings you like. Sometimes I use bulgur, celery, shredded carrots, white jasmine rice, Also a mix of ground beef and ground pork can be used with white rice and red bell peppers as stuffing.6. Mix all other ingredients together EXCEPT JUICE AND SPAGHETTI SAUCE until they are well combinedTo roll the cabbage, start onto the top edge of the leaf across from where you cut the vein out, put in about 1/2 C filling. Roll the top edge toward the bottom just to cover the filling you put in. Fold the sides in to make a sort of envelope then continue to roll locking sides from falling open. Roll cabbage around filling so as the part of the leaf (vein) you cut out is on bottom. This method also works to make eggrolls, lettuce wraps and fruit pies but those are different subjectsPut rolled cabbages into a deep roasting pan I use a turkey cooker in a double thickness like blocks 2 on bottom one in center on top of them. When all are in pan pour a big can of tomato juice in with them and pour a can of hunts spaghetti thinly all over the top. Though this recipe doesn't call for it I have used to mato soup 1 family can and 1/2 can water for sauce then squirted catsup all over the topI bake this at 375 degrees for a couple hours, remove top and cook until a crust of sorts develops from the spaghetti sauce. This is a meal in one two or three of these outta do itServing Size: At 180 cal ea two or three should do it.
