The ingredients for Quinoa Stuffed Squash are:

1 butternut squash
1 tbsp olive oil
1/2 tsp cumin
1/2 tsp coriander seed
1/2 tsp nutmeg
1 cup quinoa, rinsed and drained
1/2 cube vegetable bouillon
1/2 tsp paprika
1/4 tsp cinnamon
1/4 cup orange or carrot juice
1 tbsp ginger, minced
2 garlic cloves, minced
1 bell pepper, chopped
1 carrot, chopped
1 celery stalk, chopped
1/2 red onion, chopped

(For today's meal, I used kabocha squash in lieu of the butternut squash. I also used eggplant, red bell pepper, and yellow onion. Basically, you can substitute whatever veggies are in season for this recipe.)


How Do I Make Quinoa Stuffed Squash?

Here is how you make Quinoa Stuffed Squash:

Cut squash in half length wise. Drizzle with olive oil and sprinkle with salt and pepper, cumin and nutmeg. Put cut side down on a baking pan and bake at 400?F (200?C) for 30-50 min (should be soft and slightly brown).Pour 1 cup of quinoa into 2 cups of water. Add bouillon. Season with cumin and coriander. Bring water to a boil. Reduce to simmer and cover until water is absorbed, around 15 min.In a pan on medium heat, heat the oil and saut? the onion, garlic, and ginger.Add the rest of the veggies and saut? for a couple minutes. Season with salt, pepper, cumin, paprika, cinnamon, and juice. Cook until desired veggie tenderness.Once veggies and quinoa are ready, scoop out the inside of the squash, leaving 3/4" rim. Mix squash, quinoa, and veggies in a bowl and stuff in the squash.
