Add the flour and cook, stirring frequently, until roux ius a medium brown. This will take about 20 minutes, so be patient and don't stop stirring !! Temporarily remove the pot from the heat and add the onion, pepper, celery, seasonings and a pinch of salt. Sweat the vegetables ( cook over low heat to soften but not brown) until soft, about 4-5 minutes; you may return the pot to the heat once the temperature comes under control. Slowly whisk in the turkey stock until the mixture has the thickness of a rich soup or a thin stew. Add the sausage, okra and any left over turkey meat (if desired) and simmer over medium heat for 20-30 minutes, stirring occasionally. Salt and Pepper to taste. About 5 minutes before you are ready to serve, add the shrimp. Serve in bowls over a mound of white or brown rice and garnish with a healthy shake of gumbo file. Have hot sauce and hot cornbread on the side if desired.
